I made chocolate pudding today with pureed avocados. Even though it seems crazy, it was thick and YUMMY.

that sounds good. they always eat avocados with sugar in brasil. tony makes good avocado shakes
you have to couisnart the avocados for at least two minutes to get the smooth texture you'll want for the pudding.
this is a double batch:
melt one stick of butter (or use low fat healthy tub butter stuff)
cook for a few minutes after adding:
2 cups of avocado
1 cup unsweetened semi-sweet chocolate powder
2 cups confectioners sugar
2 tsp vanilla
afterwards add at least 1/2 cup corn starch to thicken (I don't think it needs the thickening unless you want it REALLY thick, like fudge)
That's off the top of my head. I think it's about right.
